Athirasam is now widely available, but it was traditionally festival food – special because proper preparation is demanding and ingredients weren't inexpensive. The preparation challenges remain unchanged.
The rice flour undergoes slight fermentation, developing flavour and modifying texture. Skipping this step produces dense, oil-heavy discs with unpleasant raw taste. The jaggery syrup must coat the flour without making it overly wet. Too liquid and the athirasam absorbs excessive oil; too thick and it won't bind properly.
Frying temperature is critical. Too high and exteriors burn before interiors cook. Too low and the result is oil-soaked. The acceptable temperature range is narrow and demands constant attention.
